I mentioned in my last post (yonks ago, i know i know, disastrous blogging) that i LOVE breakfast food. It has to be just right and it can NOT be skipped. On the very rare occasions I would laze in bed until almost lunchtime I still cannot start the day with lunch. Breakfast foods are absolutely essential to my very existence. Yes its that serious.

So I’ve been absolutely terrible at meeting my posting goals over the last few weeks. I’ve been really busy with work and my 6 week plan, as well as having lots on over weekends recently. This is my 3rd attempt at this post. I keep logging in to post but don’t feel inspired to write anything and so end up deleting my posts. I’m just on a quick break at work to get fed before the next task, so thought I’d check in for a moment in case WordPress forgets who I am and locks me out 🙂
Quick catch up: I’m currently on week 6 of my 6 week plan at Synergy and I feel great. I’m strength training with of the team here twice a week and doing some cardio outside of that too. We have 17 participants on the plan with us right now which is LOADS for what we are doing. Its been a great few weeks working with these guys and getting to know them better. It’s amazing how participating in something like this can really help you stay focused. You are never alone, and we often train in small groups for added motivation and a few laughs.
One thing that has become very clear to me over these few weeks is my love affair with breakfast. I’ve always had a thing for breakfast foods, but this has been so evident while on this plan. I find myself mostly eating for fuel since we started the plan – just making something healthy or grabbing bowls of raw veggies and hummus and munching away. When I am focused on a plan like this I don’t feel the need for mouth watering dishes or anything fancy. i just want to be fed so I don’t run out of energy!
But breakfast has to be good. It has to be delicious and nutritious and filling and enjoyable. So that has me thinking that I will need to do a blog post about breakfast. With recipes and ideas for bowls and plates of things that could almost be considered dessert! SO I will be back this week with some ideas to get you fuelled up in the mornings. And please don’t tell me you’re not a breakfast person because you will break my heart. And when you realise how quick and easy it is to whip up healthy pancakes, amazing oatmeal creations, smoothie bowls and more then you might just change your mind.

Sunday has finally rolled around and I’m lounging around in my PJ’s and cosy slipper boots and breathing in the fresh scent of a DAY OFF! It’s been a crazy busy week for me at Synergy with looong days of work as well as early mornings and late nights for other commitments. Happy weekend y’all! (I’m watching Nashville)
So I was working on a post about my experiments with all natural cosmetics and that was gonna be my next post. But I was being a bit lazy and suddenly it’s Friday and I thought it’d be nice to bring home a bottle of red and sip on a glass while I got my country on over Nashville and I got totally distracted. Deacon was singing. So there’s no point trying to do anything else while that’s happening. And if you haven’t seen Nashville yet then hop to it.
And then I got a craving for popcorn. Not just any popcorn. It was going to have be something sweet and spicy. To match my lovely glass of Tempranillo.
With Sunday being my only full day off, I love to wake up naturally with no alarm and take my time over my favourite meal of the day. Breakfast. Or more accurately on a Sunday, brunch. By the time I crawl out of bed, get some tea and decide what to cook breakfast time is long over but lunch time hasn’t quite rolled around. Breakfast or brunch used to be simple. Then last year I discovered pancakes. I’m not a vegan, but I do like to eliminate dairy and eggs and excessive animal produce from my home cooking. I’ve never really been much of a meat eater either, and now occasionally eat some fish but my diet is mostly vegetarian. So I’m always excited to find a new clean and healthy recipe for my favourite meal.
